Our Cheesemaking Courses are complete for another year, check back in March 2026 when new timeslots will be added for the month of May, 2026.

Our pasta filata cheesemaking workshops are held in our dairy processing plant, every Saturday of Big Cheese Days during the month of May.

All classes take place at The Golspie Dairy - 455259 45th Line, Woodstock, ON, Canada. Please arrive 5 minutes early and enter through our Retail Store, our staff will direct you once you let them know that you are here for the class.

Before the class we’ll suit you up in proper attire (hair nets, shoe covers, aprons, gloves), but please be sure to wear comfortable clothes and footwear that won't get in the way/whey. (Sorry, I just couldn't resist the pun!)

As pasta filata cheeses take about a day to make, and the class is only 1 hour in length, we've done the laborious bits ahead of time and saved the fun for you (and the clean-up for us!). During the class you’ll get to perform the filatura process (spinning the curds in hot water). You'll get to knead the curds into a malleable and stretchy dough, and then make the decision on what end shape you would like them to result in (perhaps form it into large balls of mozzarella or smaller bocconcini; maybe you'd like to stretch it into ropes and braid it or roll it up into an Oaxaca-like ball). Whatever you end up creating, it will be yummy, and you'll get to take it home with you!

The class includes everything that you will need. As this class involves the use of hot water, we ask that all participants be 10 years of age or older.

You will get to take your finished cheese(s) home with you, as well as a step-by-step instruction sheet for making your own stretched-curd cheese at home.
